At Radisson Blu Olympiyskiy Hotel, we are one team and make memorable moments for our guests.
You’ll be running the show, always on trend, inspiring a team of hungry chefs and and developing the flavours to cook up a storm.
Can you think outside of the kitchen, having a taste for the business as well as your signature dish?
Key Responsibilities:
- Creation & development of menus, concepts and food style of the overall hotel and it’s signature restaurant, Firelake Grill & Bar
- Ensures smooth running of the kitchen department, where all aspects of the guest dining experience are delivered to the highest level
- Provides the highest food quality consistent with cost control and profitability margins to maximise guest satisfaction and food profitability
- Ensures that proper safety, hygiene, and sanitation practices are followed
- Controls and analyses operational departmental costs on an on-going basis and takes necessary action to control negative deviation
- Ensures adherence to all legislation where due diligence requirements and best practice activities are planned, delivered and documented for internal and external audit
- Utilises leadership skills and motivation to maximise team member productivity and satisfaction
- Effectively manages the life cycle of the team within the department, fostering a culture of growth, development and performance whilst reflecting promoting the company culture and values
Requirements:
- 3+ years of relevant experience in Kitchen, ideally within a hotel environment and ability to demonstrate excellent standards and team member management
- Experience in menu engineering and concept creation
- Ability to adapt to changing service environments
- A genuine interest in food/dining trends and what makes a guest smile
- Experience with banquets, events, conference catering
- Desire to establish a strong food presence in the Moscow Hotel Market
- Commercially aware
- Good leadership skills with a hands-on approach and lead-by-example work style
- Driven and ambitious to inspire the team to consistently deliver and exceed service standards
- Clear thinker with excellent communication and creative abilities
- Good command of written and spoken English
